Banana bread


Wet Ingredients

  • 1.5 cups banana
  • 1/2 cup nut milk
  • 4 tbsp coconut oil
  • 4 tbsp rice malt syrup 
  • 1 tbsp apple cider vinegar 

Dry Ingredients

  • 3/4 cup oats 
  • 1 1/2 cup buckwheat flour 
  • 1 tsp baking soda
  • 1 tbsp chia seeds 
  • 1 tsp cinnamon 
  • 1/4 tsp salt 


  • 1 banana 


  1. Preheat oven to 160C degrees and line a bread tin with baking paper 
  2. Add all wet ingredients into a food processor and blend until smooth
  3. Add all dry ingredients into a bowl and mix
  4. Form a well in the dry ingredients and pour in wet ingredients and stir with a wooden spoon until combined.
  5. Pour into lined baking tin.
  6. Cut the whole banana in half long ways and push into dough. 
  7. Cook for 50 minutes
  8. Top with your desired toppings, such as peanut butter, fresh bananas and granola,  fresh berries, or simply have with butter. Store in air tight container for up to 5 days or freeze. 

Makes 10 slices.
