My new best friend in the kitchen

Vegan Bowls for Vegan Souls. I knew I wanted a copy of this cook book as soon as I saw the title. I was lucky enough to get the book with my coconut bowl for Christmas, and could not have been more excited. I am quite confident in the kitchen and normally don’t follow a recipe, but as soon as I opened this cook book I knew I wanted to recreate every page. Each recipe allows you to be creative and find new and exciting ways of cooking vegan food. There are three main reasons why this cookbook quickly became my best friend in the kitchen.

I am a Mum to a 9 month old baby boy, Hunter, and cooking healthy vegan food for my son and husband is something I not only love doing, but also believe is essential for my family to thrive. That’s the first reason why I love this cook book. I know that each recipe has the ingredients for a well balanced meal or snack. I can flick to any page and not have to worry whether I am feeding my family the right nutrients.

Secondly, the recipes are quick and easy as well as tasty. I am often time poor and there never seems to be enough hours in the day. Dinners need to be easy as well as delicious. Most of the Vegan Bowls recipes take no more than 30-45 minutes to make and if you make double quantity, like I do, lunch for the next day is sorted too!

Lastly and possibly the best thing about all the recipes in Vegan Bowls is that they appeal to everyone. My husband, who still enjoys a big steak when eating out,  loves the food I cook from this book and says he feels amazing after every meal and gladly takes left overs for lunch. His favourite meal has been the Plant Based Spaghetti and Meatballs. Hunter, loves all the flavour combinations and joins right in with us at meal times. So far his favorite has been the Basil & Mint Pesto Pasta. So not only am I fuelling their bodies with great and nutritious food, they genuinely love the meals.

So far I have made 22 out of the 100 recipes (all pictured in this blog) and I have not been disappointed. I am on a mission to cook all 100. They all look delicious and there are some new flavour combinations that I can’t wait to try. I find it very difficult to pick my favourite dish so far, but perhaps the Homemade Rawnola Cereal. It tastes like dessert, but is nutritious and yummy enough to have for breakfast, lunch or dinner! I also can't go past a good hummus, so the Edamame Hummus and Oven Fries went down a treat!

I can’t recommend this book highly enough. If a busy Mum can make these meals then so can you. You don’t need to be vegan to gain the benefits of a plant based diet; my steak loving husband is testament to that and if a 9 month old demands more than you know it must be good! My only complaint is that coconuts don't grow any smaller. I'm in desperate need of baby coconut bowl for Hunter - he's missing out!
