Almond, orange and cookies

My take on an orange and poppyseed cake, but in cookie form. I love the use of chia seeds instead as it adds a huge fiber and calcium hit!   

Ingredients

  • 1/2 juice orange

  • 1/4 cup chia seeds

  • 1/2 cup almond meal

  • 1/2 cup buckwheat flour

  • 1/4 cup maple syrup

  • 8 almonds

  • 4 pieces of organge lime chocolate from Raw Integrity Chocolates.

Method  

  1. Preheat over to 180degrees

  2. Add the orange juice and chia seeds into a bowl and let sit for 5 minutes

  3. Add flours, Maple syrup and orange chia into a food processor and blend till well combined.

  4. Scoop into 8 even size balls and place onto a baking tray.

  5. Press and almond and 1/2 square of chocolate into each cookie.

  6. Bakes for 15-20minutes, until the outside begins to go golden.

Makes 8 cookies.
