Whole Roasted Cauliflower with Greens

Tahini, Mustard, cauliflower and an abundance of greens...what more could you want? This whole roasted cauliflower is as simple as they come and will put on a smile on any ones face  perfect for a dinner party or a mid week dinner  



  • 90mls water

  • 1/4 cup tahini

  • 1 tbs sesame mix

  • 1/4 tsp salt

  • 2 tsp Dijon mustard

  • 1/2 lemon juice

  • Whole Cauliflower

  • 1 cup broad beans

  • 2 zucchini cut into 1cm rounds

  • Bunch of Asparagus, ends trimmed and cut in half

  • 1/2 lemon juice

  • 1/4 cup water

  • Fresh mint

  • 1/4 cup Roasted almonds


  1. Pre hear oven to 180C degrees

  2. Stream cauliflower in the microwave for 10 minutes to softenWhisk all the ingredients for the sauce together

  3. Put aside a quarter of the sauce for the greens later. Hold the cauliflower upside down and pour half of the remaining sauce around the inside of it.

  4. Place the cauliflower onto a lined baking tray and cover the cauliflower in the remaining sauce. Bake for 20 minutes.

  5. Place all the greens into a fry pan on a medium heat. Add in the water and lemon juice. Sauté vegetables for 10 minutes

  6. Place cooked cauliflower onto a serving dish and place greens around it.

  7. Drizzle the sauce that was put aside earlier over the greens and serve with chopped roasted almonds and fresh mint.

Serves 6-8 people as a side.
