Beetroot and Lime Tarts

Vegetables in desserts are becoming more and more popular and it's easy to see why. It is such a great way to get an extra hit a nutrients without even realising it. These Beetroot tarts provide you with so much goodness that you'll convince yourself you can eat all 4! 



  • 1 tbsp chia seeds
  • 30 grams oat flour (rolled oats blended in a food processor)
  • 60 grams shredded coconut
  • 2 tbsp rolled oats
  • 2 tbsp coconut oil melted
  • 2 tbsp rice malt syrup
  • Zest of 1 lime 


  • 150g coconut yogurt
  • 3 small beetroots, cooked & peeled
  • 2 tbsp coconut oil melted
  • 2 tbsp rice malt syrup
  • Juice of one lime 


  1. Stir all dry ingredients together for the base and then add wet ingredients and mix well
  2. Press into tart shells, 10cm in diameter, and place in the fridge for 30 minutes
  3. Place all filling ingredients into a food processor and blend until creamy
  4. Pour into tart shells and place in fridge for 3 hours to set.

Makes 4 tarts
