Mini Capsicum Salsa
This is a twist on your traditional tomato salad. Using fresh mini capsicums adds beautiful colour and refreshing summer flavour and alongside the addition of dill you can't go wrong.
- 250 grams mini capsicums
- 1/2 red onion
- Fresh dill
- 1/2 lemon juice
- 1 tbsp oil
- 1/4 tsp dijon mustard
- Salt and pepper
- Cut the ends off the Capsicum and deseed them. Finely cut them into rounds and place in a bowl.
- Finely cut the red onion and dill and add to bowl.
- Mix the lemon juice, olive oil, Dijon mustard, salt and pepper together. Once combined pour over salad ingredient and toss thoroughly.
This salad is perfect on its own, or pair with some black rice for a more filling meal.
Serves 4 as a side.
