Cold Fighting Soup

Winter time has rolled around and I am loving it - I love the cold weather but I don't enjoy the colds and coughs that often come with it! Enjoy this cold fighting soup to get you through. Packed full of orange vegetables which are high in vitamin C, an antioxidant which boosts the immune system. The anti-inflammatory components of ginger will will help to relieve a sore throat and they also kill rhinoviruses, which cause colds in the first place. For centuries Thyme has also been used to counteract symptoms of colds utilising the natural antibacterial properties. Protect yourselves again colds this season and nourish your bodies! 

Ingredients

  • 1 leek
  • 1 brown onion
  • 1 garlic clove
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp nutmeg
  • Large knob fresh ginger
  • 1 large sweet potato
  • 1/2 butternut pumpkin
  • 2 large carrots
  • 2 vegetable stock cubes
  • 6 cups of water
  • 1 can coconut cream
  • Fresh Thyme
  • Salt and pepper

Method

  1. Roughly chop the leek, onion, garlic and ginger and place in a large sauce pan with olive oil and spices. Cook until transparent and fragrant.
  2. Peel and roughly dice the pumpkins, sweet potato and carrot and add to the saucepan. Saute with the onions and leek for 5 minutes.
  3. Add the vegetable stock cubes and water and bring to the boil. Reduce to a simmer and place lid on the sauce pan for 30-40 minutes or until vegetables are tender.
  4. Place contents into a blender and blend until smooth. Depending on the size of the blender it might need to be done in 2 batches. 
  5. Return soup to the saucepan and stir through the coconut cream.
  6. Season with salt and pepper and serve with fresh Thyme.

Serves 6 as a main.
