Raspberry & Lemon IceCream Cake

Nothing better than a dessert that is not only full of flavour but is good for you right down the very last ingredient.

Ingredients

Base

  • 1.5 cups oats
  • 1.5 cups desicated coconut
  • 1.5 cups soaked and pittted dates
  • 1 lemon, rind and juice
  • 1/2 cup water

Filling

  • 1 cup frozen raspberries
  • Juice of 1 lemon 
  • 2 frozen bananas
  • 1 can coconut milk

Toppings

  • Fresh berries
  • Raw Integrity Berry Lover Chocolate
  • Fresh Lemon Balm
  • Lemon Rind

Method

Base

  1. Add the oats in a food processor and blend until a flour consistency is reached
  2. Slowly add remaining ingredients and blend until a dough is formed.
  3. Press into a tart tin

Filling

  1. Add all ingredients into a food processor and blend until a smooth consistency is reached
  2. Pour onto the base and place in freezer for 2-3 hours
  3. Place all your toppings on top and serve.
