Raspberry & Lemon IceCream Cake
Nothing better than a dessert that is not only full of flavour but is good for you right down the very last ingredient.
- 1.5 cups oats
- 1.5 cups desicated coconut
- 1.5 cups soaked and pittted dates
- 1 lemon, rind and juice
- 1/2 cup water
- 1 cup frozen raspberries
- Juice of 1 lemon
- 2 frozen bananas
- 1 can coconut milk
- Fresh berries
- Raw Integrity Berry Lover Chocolate
- Fresh Lemon Balm
- Lemon Rind
- Add the oats in a food processor and blend until a flour consistency is reached
- Slowly add remaining ingredients and blend until a dough is formed.
- Press into a tart tin
- Add all ingredients into a food processor and blend until a smooth consistency is reached
- Pour onto the base and place in freezer for 2-3 hours
- Place all your toppings on top and serve.
