Vegan Sausage Roll


  • 1/2 red onion diced
  • 1tsl fennel seeds
  • 1tsp fennel ground
  • Salt and pepper
  • 1 chia egg (1tbsp chia 1/3 cup water, let sit for 5 minutes)
  • 1 grated carrot
  • 2 large button mushrooms diced
  • 1 can lentils
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 sheets puff pastry


  1. Preheat oven to 180C degrees
  2. Add all ingredients into a bowl except puff pastry and combine well
  3. Lay puff pastry sheets on the bench and cut in half. Place filling down the middle of each half and roll up, making sure that the pastry meets and seals shuts. 
  4. Cut each sausage roll in half, making 8 sausage rolls, and place onto a baking tray.
  5. Bake for 20-25 minutes or until pastry is golden brown
